We are a "scratch" kitchen, that means that most of our food is made from scratch on premise. Most of the chains use food that was made in a factory, somewhere, maybe in another state or country, that is then frozen, shipped and then microwaved and put on your table. We take raw ingredients and make our dishes right here in our own kitchen. We cut our own beef, poultry and fish and cook it on site. We truly are a "local" business.
Our vegetarian food really is vegetarian! We have a separate vegetarian fryer and flat top (so your vegetarian quesadillas are not cooked on the meat griddle). Our cooks are all trained to not mix spoons, cutting boards, knives, etc that are used for the vegetarian food with any meats. We do not use chicken stock as the "universal" flavoring. Both our beans and rice are made vegan (vegans ask for no cotija on the beans). Our tortillas and our vegetarian tamales do not contain lard or any meat products. A number of Mexican restaurants in the region use chicken stock in their rice even though listing it in the vegetarian section of their menu. We do not! One of the owners is a 40 year vegetarian and is very strict about our vegetarian items really being vegetarian! Because of this we try to have just as interesting dishes for vegetarians as we do for our meat eating friends.
